Shrimp and Sausage Quick n ‘Easy

• 400g medium sized shrimp, heads and tails removed, cleaned
• 200g sweet Italian sausage, chopped
• 2 red bell peppers, chopped
• 2 yellow bell peppers, chopped
• 1 teaspoon red chili powder medium onion chopped
• 2 cloves garlic, skin removed, chopped small
• 2 tablespoons coconut oil
• 4 leaves of fresh mint, chopped
• 1 cup baby spinach
• Salt
• Pepper
1 In a bowl, add salt over the shrimp and let it rest.
2 In a pan, heat 1 tablespoon of the oil along with the garlic and onion. Fry until the onions are golden brown.
3 Add the peppers along with the chili powder and salt. Fry on medium heat for 5 minutes or so.
4 Remove from heat and cool. Transfer to a blender and add the mint leaves. Blend until a paste is formed. If the paste is too thick, add some oil to it. If it is still thick, add a little water.
5 On the same pan, heat the remaining oil.
6 Drain the water from the bowl of shrimp in the first step and season with pepper.
7 Add the sausage and shrimp to the pan and also add the paste prepared in step 4. Add as much or as little as you want.
8 Fry until the shrimp is cooked.
Serve on a bed of baby spinach or a salad of your choice!
