Prepare these crave-worthy glazed chicken bites for snacking while you’re watching the big game. A healthier version of traditional chicken wings, this dish is definitely a winner!
Total prep, cooking, and pressure release time: 17 minutes
1½ cups water
1 teaspoon paprika
8 ounces chicken breast tenders, all visible fat discarded, halved crosswise
2 tablespoons honey
2 tablespoons barbecue sauce (lowest sodium available)
1 tablespoon soy sauce (lowest sodium available)
1. Place the steaming rack in the pressure cooker. Pour in the water. Sprinkle the paprika over the chicken. Place the chicken on the steaming rack. Secure the lid. Cook on high pressure for 5 minutes. Quickly release the pressure.
2. Preheat the broiler. Line a large baking sheet with aluminum foil.
3. In a medium bowl, whisk together the honey, barbecue sauce, and soy sauce. Dip the chicken pieces in the sauce and transfer to the baking sheet. Broil for 1 to 2 minutes per side, or until crisp and charred (watch carefully to avoid burning).
COOK’S TIP: This recipe can easily be doubled and served as a main dish with a dark green, leafy salad.
