INDIAN VEGETABLE CURRY

8 ounces cauliflower florets, cut into 2-inch pieces
1 red potato, unpeeled, cut into ¾-inch pieces
1 small onion, chopped
3 garlic cloves, minced
1 tablespoon grated fresh ginger
1 tablespoon tomato paste
1 tablespoon vegetable oil
4 teaspoons curry powder
¾ teaspoon table salt
2½ cups chicken or vegetable broth, plus extra as needed
1 (15-ounce) can chickpeas, rinsed
¾ cup frozen peas, thawed
¼ cup chopped fresh cilantro
WHY THIS RECIPE WORKS Curries usually require a laundry list of spices and hours of simmering time, but we wanted to create a deeply flavorful Indian-inspired curry sauce quickly in the blender. And we wanted to add enough vegetables to make a satisfying meal. To give our sauce a nice backbone, a hefty amount of curry powder along with onion,garlic, fresh ginger, and tomato paste was all we needed. For the vegetables, cauliflower, potato, peas, and convenient canned chickpeas made for a classic combination easy to incorporate into our blender sauce. But we found that we needed to give the sturdy chunks of potato and the fibrous cauliflower florets a head start if they were to cook through fully in the blender sauce, so we microwaved them along with the aromatics just to soften them a bit. The chunky soup function proved to be our best option because it cooked the vegetables without breaking them down too much; we added them along with the aromatics, chickpeas, and broth, stopping the cycle just a few minutes early to add the peas. The chickpeas broke down a bit as did the cauliflower, both of which helped thicken our now fragrant sauce. Serve over rice.
1. Microwave cauliflower, potato, onion, garlic, ginger, tomato paste, oil, curry powder, and salt in bowl, stirring occasionally, until cauliflower and potato begin to soften, about 5 minutes; transfer to Ace blender along with broth and chickpeas. Lock lid in place, then select soup program 1 (for chunky soups), pausing occasionally to redistribute ingredients by hand.
2. Pause program 3 minutes before it has completed. Carefully remove lid and add peas. Return lid and resume program. Once program has completed, season with salt and pepper to taste. Sprinkle individual portions with cilantro before serving.
